• Flattens high and low spots to create an even surface.
• Blade is high-speed steel (SKH-51) for about three times longer edge retention than conventional steel.
• Cherry wood handle is hard and durable, with enough weight for good balance and a secure grip.
• Thin high-speed steel edge is backed by soft core iron, so it sharpens like ordinary steel and resists losing its temper even under machine sharpening.
